Another super flavorsome summer salad coming right up!
Try saying that 5 times fast haha.
I was lucky enough to receive two boxes of local apricots the other day and so the era of everything apricot unsurprisingly began.
We have our Pearl Couscous with Apricots, Arugula & Chickpeas… plus a lot of other tasty morsels.
Apricots in fruity smoothies.
Apricots cooked down into deliciously sweet + tart jammy substances ideal for yogurt and ice cream topping.
Apricots straight to the face.
And apricots thrown into green salads with more fruit and of course vegan feta, because I am obsessed and there is no end in sight.
This particular winning combo includes peppery arugula, plump raspberries, juicy apricots (of course), nutty toasted almonds, a generous handful of fresh basil and mint, creamy vegan feta, plus the simplest balsamic olive oil dressing.
The flavors be poppin’ my friends.
Serve with a generous hunk of fresh, crusty bread and a glass of rosé then call it dinner.
P.S. Be sure to use a quality thick + sweet balsamic for this one… we don’t want that watery sock water stuff.

P.P.P.S. This salad serves one to two, depending on how hungry you are and how much produce you want to guzzle.

Raspberry Apricot Arugula Salad with Basil & Mint
Ingredients
Dressing
- 2 teaspoons extra virgin olive oil
- 1 teaspoon balsamic vinegar of Modena (I use Trader Joe's)
- Freshly cracked black pepper, to taste
- Pink sea salt, to taste
Salad
- 4 cups arugula
- 1 1/4 cup sliced apricots
- 1 cup raspberries
- 3 tablespoons toasted sliced almonds
- 1/2 cup fresh basil, whole leaves or roughly chopped
- 1/4 cup fresh mint, whole leaves or roughly chopped
- 1/4 cup crumbled vegan feta (I use Trader Joe's), optional
Instructions
- In a large bowl, whisk the dressing until well combined.
- Gently fold in the salad ingredients. Taste and adjust ingredient amounts, if you wish.
