Avocados have to be one of my favorite vegetables… er fruit? They are so fresh and creamy, and good for you too. As long as you don’t eat like five a day. That might be a bit much.

This magical green fruit is super tasty in dip form (hello guacamole), makes excellent smoothies (with mango, pineapple juice and ginger!), takes toast to a whole nother level (really you must try), and turns a vegetarian sandwich into an actual enjoyable source of calories.

So how do you pick out a ripe, bruise-free avocado at the grocery store? You want to feel near the stem, the avocado should give a little when you press lightly with your thumb. If you are going to use the avocado in a few days, pick out a firmer avocado. Always check for indents. Avocados bruise and brown easily, as I’m sure most of us know. There’s nothing worse than dreaming about the avocado toast you are going to devour later in the day, only to find out that your avocado is a brown mushy mess after the drool has already collected in your mouth. Dang.

When you have your perfect avocado and are ready for a snack, cut that baby in half, rub it down with some fresh lemon juice, spoon a bit of veganĀ basil pesto in the center, then sprinkle on red pepper flakes (I like it spicy), chopped fresh parsley and good ole S&P. Now, here’s the important part… take a big spoon, dig in and enjoy!
