Okay guys, this is it.
My latest favorite breakfast!
We’re talking sweet and salty peanut butter banana baked oats with pockets of melty dark chocolate.
And you can’t forget that luscious pb + chocolate drizzle.
Man oh man.
If you’re not a breakfast eater surely this bowl of goodness will change your mind…
At least consider it, okay?
All you have to do is mix together sweet mashed banana, creamy oat milk, salted natural peanut butter, pure maple syrup, real deal vanilla extract, flaxseed meal, old fashioned rolled oats, fragrant cinnamon, baking powder, pink sea salt and your fave roughly chopped dark chocolate.
Bake until hot and delicious.
Then top with banana slices, peanut butter, melted chocolate and salted peanuts.
Because we’re extra, duh.
Share the other bowl with someone special, or store in the fridge for later and reheat in the oven (covered with foil) until warm.
I won’t judge if you inhale everything in one go though ha.
P.S. Make sure your banana is ripeee! For optimal oatmeal taste and texture, you know.

Baked Vegan Peanut Butter Banana Chocolate Chunk Oatmeal
Ingredients
Baked Oatmeal:
- Unrefined coconut oil, for greasing pans
- 1/2 cup mashed very ripe banana (1 medium-large banana)
- 3/4 cup unsweetened unflavored oat milk (I like Silk and Oatly original)
- 2 tablespoon salted natural peanut butter (no added oil or sugar)
- 1 tablespoon pure maple syrup
- 3/4 teaspoon pure vanilla extract
- 1 1/2 teaspoons flaxseed meal
- 1 cup rolled oats
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/8 teaspoon pink sea salt
- 2 tablespoons roughy chopped dark chocolate (I use 70% cacao bar)
Toppings:
- Sliced banana
- Peanut butter, for drizzling
- Melted dark chocolate, for drizzling
- Salted peanut halves
Instructions
- Heat oven to 375. Grease two 5 1/2-inch diameter (length across) oven-safe bowls with coconut oil.
- In a medium sized bowl mix the mashed banana, milk, peanut butter, maple syrup, vanilla and flaxseed meal until thoroughly combined. Let the mixture sit for 5 minutes.
- Stir in the oats, cinnamon, baking powder and salt until well combined. Fold in the chocolate chunks.
- Divide the mixture between the two greased bowls then bake for 30 minutes or until the center no longer looks wet. Don't overbake.
- After removing from the oven, let the oatmeal rest for 5 minutes.
- Top with banana slices, peanut butter, melted chocolate and peanuts.
I don’t normally eat oatmeal as I normally put it in my smoothies. But, this oven baked oatmeal sounds and looks delicious. I will definitely give it a try! Thank you for the recipe.
