We’re talking juicy yellow peaches, sweet raw corn straight off the cob, creamy perfectly ripened avocado, nutty toasted almonds + peppery arugula.
Not to mention a generous drizzle of high-quality balsamic vinegar for even more depth of flavor.
Do salads get much better than this?
The answer is no.
No they don’t.
So toss together some magical summer produce and dig right on in.
P.S. Be sure to get alll of that sweet peach + corn juice in your bowl to add even more taste bud tingling flavor.
P.P.S. The creamy cado and fruit juice will mingle with the vinegar for a simple, yet delectable dressing. Less is more.
P.P.P.S. Yes you can use a nectarine in place of the peach. Or swap in mixed greens for the arugula. No need to get your undies in a bunch over the recipe specifics now.

Balsamic Peach & Corn Salad with Arugula & Avocado
Ingredients
- 3 lightly packed cups arugula
- 1 cup fresh raw corn kernels, scraped off the cob
- 1 cup diced peach (about 1 medium peach)
- 1 cup diced avocado (about 1/2 medium-large avocado)
- 2 tablespoons toasted sliced almonds
- 2 teaspoons high-quality balsamic vinegar
- Pink sea salt, to taste
- Freshly cracked black pepper, to taste
Instructions
- Gently toss all of the ingredients together until combined, being sure to include as much peach and corn juice as possible. Taste and adjust ingredient amounts accordingly.
