There’s something so satisfying about popping a bite of fluffy, tender pancake into your mouth and experiencing the burst of a sweet, warm blueberry.

For whatever reason I cannot manage to produce a decent pancake, therefore the quick-cooking blueberry pancake oatmeal copout.

I know I know.

Oatmeal is not the same as pancakes…

Not even close!

But.

The flavors are there, and you still get to enjoy the juicy hot berry factor.

We’re talking cozy oats, frozen blueberries picked and preserved at the height of ripeness, fragrant ground cinnamon, creamy oat milk, pure maple syrup, real deal vanilla extract, pink sea salt, plus a pat of plant-based butter, more blueberries, and a drizzle of that delicious syrup.

Round off your breakfast with a plop of nutty almond butter and a sprinkle of healthful hemp hearts.

Eat up!

P.S. If you have fresh blueberries you could certainly sprinkle those on top, although frozen bluebs do work exceptionally well cooked into your actual oatmeal. For my blueberry topping I zapped a handful of frozen berries until they started to burst and turn jammy once slightly cooled. Don’t singe those taste buds now!

P.P.S. Peanut butter would be scrumptious dolloped on top as well. PB does tend to be a bold character so keep that in mind of course!

P.P.P.S. And yeah yeah, I’ve been sharing a lot of breakfast/oat recipes as well as blueberries, but that’s what I’ve been eating and that’s what I like, okay? Okay.

Blueberry Pancake Oatmeal

Ingredients
  

  • 1 cup water
  • 1/2 cup quick cooking oats (not instant oats)
  • 1/3 cup frozen blueberries
  • 3 dashes ground cinnamon
  • 2 tablespoons unsweetened unflavored oat milk (I like Silk or Oatly original)
  • 1 teaspoon pure maple syrup
  • 1/4 teaspoon pure vanilla extract
  • Pink sea salt, to taste

Toppings

  • 1 pat vegan butter (I used Miyoko's)
  • Fresh or heated frozen blueberries (I microwaved frozen blueberries)
  • Pure maple syrup, to taste
  • Natural almond butter, optional (no added oil or sugar)
  • Hemp hearts, optional

Instructions
 

  • Bring a small pot of the water to a low boil, then stir in the oats, blueberries, and cinnamon.
  • Simmer for 3 minutes, stirring occasionally.
  • Stir in the oat milk, maple syrup, vanilla, and salt, then heat for another minute over low until warmed.
  • Spoon the blueberry oatmeal into a bowl, then top with butter, blueberries, and maple syrup.
  • Add a drizzle of almond butter and a sprinkle of hemp hearts, if you wish.
