For the longest time “enchiladas” meant extra cheesy casserole dish containing slightly soggy flour tortillas and lots of canned sauce.
Now, that whole cheesy casserole situation is not a bad thing, but I do prefer real enchiladas.
After seeing (anddd drooling over) approximately 139 recipes for chocolate peanut butter overnight oats across the web, I finally had to stir some up for myself.
I can only be tempted with the heavenly chocolate peanut butter combo for so long…
I love me some teriyaki takeout.
Picture a humongous pile of fried tofu smothered in super sweet, thick teriyaki sauce dumped over a mound of brown rice.

Now I understand that a lot of folks out there might be a little afraid of, or possibly even grossed-out by these white cubes of joy soy.
