Hello again, white tile.

I’m getting a wee bit tired of seeing your shiny, smug face beaming up at me.

Because you know all this kitchen remodeling talk will probably take a while to turn into some real action.

But hey, I can’t complain because this isn’t even my kitchen.

Even though my kitchen is covered in white tile as well.

Sigh.

Some things are not easy to escape.

Unsightly white tile, of course, along with bananas that won’t ripen quite fast enough, apartment neighbors who consistently enjoy having late-night (early-morning?) convos, and shower drains that refuse to remain unclogged for longer than 2.4 days.

A bowl of cauliflower and tomatoes with cumin will certainly brighten up just about anyone’s day though.

Even if your phone storage space is full and you consequently shed a tear after removing each and every Snoop Dogg masterpiece from your currently dwindling music library.

First world problems right here.

The solution to these “problems” is to spend a minimal amount of time and effort whipping up something healthy and flavorful!

Because (as we all know) devouring some healthy grub improves your mood.

Even though Grumpy the dwarf is endearing at times, everyone loves Happy a little more. (If you weren’t previously aware, Snow White does have her favorites.)

So, after you magically transform from Grumpy to Happy post healthy nosh, you’ll feel a wave of energy take over your physical and mental being.

Now would be the time to skip down the hallway or sprint up a few flights of stairs just for the heck of it.

If this display of exuberance is enacted to the beat of Pharrell’s “Happy,” gold stars will be awarded.

All of the activity will kick those creative juices everyone talks about into high gear.

You will then proceed to write a soon-to-be best-selling novel, which will shortly thereafter turn into a ridiculously popular movie starring none other than Jennifer Lawrence aka J. Law aka the girl you want to grow up to be.

Win-win-win.

Two “wins” is clearly not enough.

All you have to do is saute fresh cauliflower in a bit of olive oil with juicy tomatoes, earthy cumin seeds, fresh ground black pepper, salt and minced garlic for a kick.

Easy.

Even if you’re not digging the counter tops, you can still enjoy something tasty.

And be Snow White’s favorite… tied with Dopey.

P.S. Throw in some garbanzo beans to make this easy side dish an easy meal.

P.P.S. This is a really good opportunity to consume naan bread.

P.P.P.S. Plop a dollop of nonfat Greek yogurt on top for some more protein and calcium! Unless you’re vegan or lactose intolerant, in that case please refrain.

P.P.P.P.S. I know it’s winter and winter tomatoes are sad tomatoes, but when you cook them up with olive oil, cumin and garlic, they become a little more jolly.
