Another day, another smoothie.

This guy is extra special though.

We’re talking a complete meal, not just a snack.

I guarantee you’ll be feeling pretty jazzed after consuming this magic drank, thanks to naturally sweet fruit, fresh veggies, multiple sources of plant protein and fiber!

Not everyone is in love with chia seeds and their frog egg like texture, but if you blend them right up you won’t even know they’re there!

And you’ll still absorb all the health benefits, of course.

Win and win.

All you have to do is soak those little chia seeds in creamy toasted coconut almond milk until plump, then blend with fresh baby spinach, pure vanilla extract, frozen banana slices, diced zucchini, nutty natural peanut butter, pea protein powder, hemp hearts and fragrant ground cinnamon until thicc and creamy.

Spoons are highly encouraged.

P.S. No you won’t taste the vegetables. I promise. Unless your sense of taste is abnormally strong.

P.P.S. If you’re strapped for time skip the chia soaking step and simply blend everything at once. Life’s too short to be high maintenance on the regular.

P.P.P.S. Yes, yes I did smear peanut butter inside my mason jar for aesthetics + more pb action. Just drag that spoon of yours up the jar before transporting the goods into your mouth. You’re welcome.

Prep Time 5 minutes
Resting Time 2 hours
Total Time 2 hours
Servings 1

Ingredients

  • 2 tablespoons chia seeds
  • 3/4 cup toasted coconut almond milk blend (I use Califia) or unsweetened unflavored oat milk (I use Silk) divided
  • 2 cups lightly packed fresh baby spinach
  • 1/2 teaspoon pure vanilla extract
  • 2 cups very ripe frozen banana slices
  • 1 cup diced refrigerated fresh zucchini
  • 2 tablespoons salted natural peanut butter (no added oil or sugar)
  • 2 tablespoons pure pea protein powder
  • 2 tablespoons hemp hearts
  • 1/4 teaspoon ground cinnamon

Instructions

  • In a mason jar or glass, mix the chia seeds and 1/2 cup of the milk. Let the mixture thicken in the refrigerator for at least 2 hours. If you're low on time, skip the soaking step and simply blend everything together.
  • Blend the chia mixture with the spinach, vanilla, and remaining 1/4 cup milk.
  • Add the remaining ingredients, then blend until smooth.
