Combining two of my fave easy, healthy sweet treats here!
Frozen chocolate covered peanut butter banana slices + peanut butter stuffed dates with cinnamon.
It’s no surprise that the common denominator is peanut butter ha.
You know I’m all for desserty breakfasts, and this iteration definitely gets a pass.
We’ve got fiber, protein, and antioxidants people.
If that doesn’t scream health I don’t know what does.
Anyway.
All you have to do is layer naturally sweet and gooey Medjool date halves with creamy peanut butter, perfectly ripened banana slices, fragrant ground cinnamon, and luxurious melted dark chocolate.
Freeze and eat!
I may or may not have inhaled all the bites in one sitting… oops.
Although I’m not opposed to finding someone to share with! *hint hint*
P.S. I like these bites half frozen aka when the chocolate hardens but the bananas aren’t completely frozen solid. The sweet spot seems to be about an hour of ice box time. Do what you want of course!
Chocolate Peanut Butter Banana Date Bites
Ingredients
- 4 soft Medjool dates, halved, pits removed
- 2 tablespoons salted natural peanut butter (no added oil or sugar)
- 8 slices banana (about 1/2 medium banana)
- 8 dashes ground cinnamon
- 1.1 ounce melted high-quality dark chocolate (I use 70%)
Instructions
- Place a piece of parchment paper on a medium-sized plate (make sure the plate will fit in your freezer).
- Spread the 8 date halves out on the plate, gently smooshing down to flatten if necessary.
- Top each date half with 1/4 tablespoon peanut butter, followed by one banana slice.
- Top each banana slice with a dash of cinnamon.
- Drizzle the melted chocolate over each peanut butter banana date bite.
- Freeze for an hour, or until just firm. Store in the freezer.
