Couscous with Grilled Vegetables, Chickpeas & Feta | Living Healthy in Seattle

Summer is approaching! Well, not really, but we can pretend.

Pretending is acceptable, right? As long as you don’t pretend too much.

It’s okay to pretend you’re Beyonce sometimes.

Although, people might start to judge if you dance around the grocery store in 7 inch heels with wind blowing through your majestic hair (indoors) like it ain’t no thang.

Let’s leave that awesomeness to Beyonce herself please.

But pretending it’s summer in May seems reasonable enough.

I just wanted to grill some veggies. Actually, I just really wanted to grill some asparagus. (Sorry bell peppers, you’re good too… but asparagus is my favorite.)

Grilled asparagus is so dang hard to resist.

You can’t just have grilled asparagus for dinner though. I mean, you can, but it’s nice to get some protein in there.

And cheese.

Always cheese.

Feta cheese in this case.

Add some whole wheat couscous, chickpeas, colorful bell peppers, minced garlic, fresh lime and Italian parsley to the mix and you’ve got yourself a healthy, oh so flavorful meal.

P.S. I strongly dislike the word meal, just for the record.
