Creamy Cauliflower & Carrot Cheddar Soup

Creamy Cauliflower & Carrot Soup | Living Healthy in Seattle

Oh yeahhh, soup season has arrived.

And when I say “soup season” I mean the type of soup that sends gentle billows of steam into the air and warms your soul.

Not the “fake” chilled kind of soup that you would delicately sip on during the warmer months.

Fall and winter soups are meant for slurping. (If you’re alone.)

Please do not slurp if another unfortunate being is in your presence.

Unless you all slurp together…

Before things start to get weird(er), let’s talk about how this soup is so very Halloweenish!

Mostly because it’s orange, but also because red pepper flakes give it some kick.

Apparently Halloween translates to orange spiciness in my world.

And cute costumes but that’s a whole nother topic that we will not entertain today.

The real reason why this particular soup is one of my favorites is because it’s sooo easy.

Minimal ingredients are required (10 including S&P) and it comes together rather quickly (20 minutes)!

You know me, all lazy and impatient.

But hey, I think it’s totally acceptable to be a bit lazy if you can whip up a soup that includes all the goodness that garlic sauteed in buttah, creamy cauliflower, tender carrots, flavorful vegetable broth, ground nutmeg, spicy red pepper flakes and sharp cheddar cheese have to offer.

P.S. Blend it, blend it real good.

P.P.S. Season, season, season.

P.P.P.S. I’m dressing up as Ariana Grande for Halloween! Cat ears and all.
