Breakfast time! Snack time!! Dinner time!!

Yes occasionally I do consume granola, or oatmeal, or a combo of the two for dinner.

Weird? Maybe.

Tasty? Definitely.

Just get your veggies in during lunch.

So besides Christmas time when I whip up a big ole batch of homemade granola for my dad, I normally just fill up a bag of nutty oats from the bulk section of my local natural foods grocery store.

Because I’m a snobiddy snob, duh.

But granola can be expensive and a little too sugary, so I figured it was time to make the stuff come to life and save a couple pennies.

Plus this version tastes soooo good and there is no refined sugars or oils involved!

Chilled glass of almond milk cheers to that!

I have another recipe right over here… but honestly this Double Coconut Granola with Pecans & Almonds is healthier and I prefer the taste as well.

Talk about improvements.

It’s really pretty simple, you just have to set aside an hour and a half to stir and rotate the pans while your granola is baking away to crispy, fragrant perfection.

I’m a bit hungry right now… can you tell?

So all you have to do is mix together (gluten-free) rolled oats, almond slices, nutty pecan pieces, unsweetened coconut flakes, pure maple syrup, tropical unrefined coconut oil, pure vanilla extract, ground cinnamon, plus a nice pinch of sea salt!

Bake away, low and slow, and you’ll be rewarded with some darn good homemade granola.

Gift it, share it, or inhale it all yourself.

P.S. Serve with your favorite nondairy beverage or coconut milk yogurt, or sprinkle the stuff on top of smoothies, oatmeal, almond butter toast (with perfectly ripened banana slices), or straight into your mouth. Yes.
