I LOVE me some s’mores.

But it’s not all that often that I find myself roasting mallows on an open campfire.

Prop tip: wait until the fire dies down, then slowly rotate your precious marshmallows over a bed of hot coals rotisserie chicken style.

Patience is a virtue peeps!

Or simply pop your ingredients in a hot oven and call it good.

Because it’s just that, good.

S’mores indoors!

All you have to do is artfully arrange your fluffy vegan marshmallows and luscious dark chocolate squares on top of graham crackers then bake away!

Five to seven minutes later your ooey gooey mallows will be puffed and golden, and your chocolate will be nice and melty.

(Now’s the perfect opportunity to introduce a blob of creamy peanut butter to the party.)

Carefully sandwich your s’mores together (they will be hot!) then sink your teeth into that.

Serve with a cold glass of oat milk, of course.

P.S. I use Annie’s Organic Honey Grahams because I am A-OK with consuming honey, but there are vegan varieties out there—Annie’s Organic Cinnamon Grahams are also tasty s’mores material. Kinnikinnick graham crackers are vegan and gluten-free!

P.P.S. My peanut butter took an overeager bellyflop off the knife and landed with a big messy plop on top of the melted chocolate, but I’m not complaining!

Easy Vegan Oven S'mores

Ingredients
  

  • 2 full sheets graham crackers (I use Annie's, choose a brand without honey, or a gluten-free brand if you wish)
  • 2 vegan marshmallows (I use Dandies)
  • 3/4 ounce high-quality dark chocolate bar (I like 65% to 75% cocoa), or enough chocolate to cover half of two graham cracker squares (half sheets)
  • Salted natural peanut butter (no added oils or sugar), optional

Instructions
 

  • Heat the oven to 425.
  • Break the two graham cracker sheets in half, then place the four squares on a parchment-lined metal baking sheet.
  • Top two of the graham cracker squares with one marshmallow each.
  • Top the remaining two graham cracker squares with the chocolate. The chocolate will melt and spread so don't cover the entire graham cracker squares with chocolate.
  • Bake the s'mores for 5 to 7 minutes, or until the marshmallows are lightly browned.
  • Carefully remove the s'mores from the oven, then let cool for one to two minutes on the baking sheet.
  • If using peanut butter, drizzle on top of the chocolate, to taste.
  • Place each chocolate covered graham cracker square on top of a marshmallow covered graham cracker, lightly pressing down.
  • Cool for another minute, then enjoy!
