I’m going all in on the pumpkin this year.

We’re talking carving pumpkins, drinking pumpkins, and eating pumpkins, of course.

I mean, tis the season, right?

And I wasn’t about to make homemade vegan yogurt for this little number (lazy much) so instead I did the whole semi-homemade snack attack routine.

Can you blame me?

All you have to do is whisk unsweetened unflavored coconutmilk yogurt with canned pumpkin puree, pure maple syrup–for just the right amount of sweetness, and real deal vanilla extract, plus ground cinnamon, ginger, nutmeg, and cloves for that autumnal spice action.

But we’re not done yet!

Sprinkle some of this magical, mouthwatering Nutty Maple Snack Mix on top for an extra special treat.

P.S. As always, taste and adjust the ingredient amounts to make your taste buds happy as can be. If your spices are super fresh, start with less! You can always add more… it’s not so easy taking ingredients out ha.

Easy Vegan Pumpkin Spiced Maple Yogurt

Ingredients
  

  • 1 cup unsweetened unflavored coconutmilk yogurt (I use SoDelicious)
  • 1/4 cup canned pumpkin puree
  • 1 tablespoon pure maple syrup, or to taste
  • 1/4 teaspoon pure vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • Granola or nut snack mix, for topping (optional)

Instructions
 

  • In a medium-small bowl, whisk the yogurt, pumpkin, maple syrup, and vanilla until well combined.
  • Add the spices, then whisk again.
  • Top with granola or nut snack mix before serving, if you like.
