If you’re craving some Mexican inspired eats and don’t want to labor over enchiladas or even tacos, these tostadas are it!
You get all those fresh flavors and a variety of satisfying textures, plus you have the opportunity to eat with your hands ha.
Oh and they’ll be ready in 15 minutes!

This is a basic recipe so feel free to add roasted veg or vegan “meat” if you want to go the extra mile.
Honestly I think it’s pretty good as is, although being the recipe creator I might be just a titch biased.
All you have to do is toast up a few tostadas in the oven until hot and fragrant (skip this step if you’re really strapped for time) then top them with refried beans, creamy avocado, finely shredded cabbage, a zesty fresh salsa, crumbled vegan feta (I know that’s not Mexican but deal with it), hot sauce, and cilantro sprigs.
Serve with juicy lime wedges then you’re set!

P.S. The ingredient amounts don’t have to be exact, eyeball if you want! I personally don’t care for dirtying a bunch of measuring utensils.
P.P.S. Here’s my original tostada recipe, I still remember the moment when I moved my full plate too quickly en route from the kitchen to the dining table and my loaded tostada went flying… only to splat on the floor. Tear. With that said, be careful! That’s precious cargo! Spicy babies on board!

Easy Vegan Tostadas
Ingredients
- 3 tostadas (I use Guerrero brand)
- 1 cup vegan refried beans (I used Trader Joe's Refried Black Beans with Jalapeno)
- 1/2 cup roughly chopped tomato (I used cherry tomatoes)
- 1/2 teaspoon fresh lime juice
- 1 tablespoon roughly chopped fresh cilantro
- Pink sea salt, to taste
- 1/2 avocado, sliced
- 1 cup finely shredded green cabbage
- 3 tablespoons crumbled vegan feta (I use Trader Joe's)
- Hot sauce, to taste (I use Aardvark Habanero Hot Sauce)
- Cilantro, for topping
- Lime wedges, for serving
Instructions
- Heat oven to 400. Place the tostadas on a metal baking sheet and toast for 4 to 5 minutes, or until hot and fragrant.
- Meanwhile, heat the beans in a small pot until hot, stirring occasionally.
- For the salsa, stir together the tomatoes, lime, cilantro and salt, to taste.
- Remove the toasted tostadas from the oven and carefully spread the refried beans on top of each.
- Next top the tostadas with the avocado, salsa, cabbage, cheese, hot sauce and cilantro. Serve with lime wedges.
