When ever I think of summer, caprese is one of the first thoughts that pops into my mind.

After sun, hot, tan, ice cream, and beaches, of course.

Caprese sandwiches are probably one of my favorites.

Mostly because of the whole cheese + bread thing.

But also because of the whole fresh basil + summery, juicy, flavorful tomatoes thing.

I’ve professed my undying love for creamy burrata before.

So mozzarella got the boot.

And I’ve been inhaling tomatoes by the fistful for the past few weeks, so I thought it was about time some sweet peaches made their way onto my taste buds and into my stomach.

I actually used a combo of nectarines and peaches in this sammie, but you could certainly use just one or the other.

This sandwich is extra special because the peaches and bread are actually grilled!

So the final result is the most heavenly combo of hot, crunchy, creamy, juicy, sweet, and fresh.

Oh man.

I can’t wait to grill up some more of these.

In the meantime, throw together an epic summery sandwich for yourself and maybee a few other lucky individuals.

(Or just yourself, nothing wrong with being selfish all the time sometimes.)

All you need to do is coat juicy peach wedges and your sliced baguette in extra virgin olive oil, grill both over medium heat until nice grill marks form, then slather creamy burrata on the bottom half of the bread, season with salt and fresh ground black pepper, drizzle on a little more olive oil, top with the hot peaches, drizzle those suckers with a bit of balsamic vinegar for a kick of acid plus some sweet honey (if you choose), sprinkle on a few fresh basil leaves, then close your sandwich up and take a huge bite as all those lovely juices dribble down your chin and hands.

Perfection.

P.S. You could skip the grilling bit, but I strongly recommend showing your grill some love.

P.P.S. If you do grill your peaches and bread, eat your hot sandwich asap because it might start to get a little soggy. And soggy sandwiches are never okay.

P.P.P.S. If you’re wanting to make this sandwich vegan, just double up the peaches, leave out the honey, and nix the cheese. You could even introduce some grilled tomato slices to the scene.

P.P.P.P.S. This one’s kind of a no-brainer, but if you’re trying to go the gluten-free route simply use your favorite baguette-like gluten-free bread.
