It’s cocktail timeee!
I normally get pretty pumped about cocktails in general, and this little number is no exception.
It includes all my favorite characters–vodka, fruit, and bubbles–plus I got to put my cool, classy, and cute copper mugs to work!
Talk about fun summer sips.
Although, I definitely wouldn’t be opposed to putting down one or three of these during the winter months…
Anyway.
I thought it would be fun to make zesty, fruity ice cubes to add an extra little something something to the traditional mule.
All you have to do is mash up juicy thawed frozen raspberries, stir in fresh lime juice + a couple good pinches of zest, then spoon the refreshing mixture into ice cube trays before popping them in the freezer.
When happy hour hits, fill two copper mugs with the raspberry lime zest ice cubes then top with a couple glugs of your favorite vodka, bubbly ginger beer, and more lime juice!
Garnish with fresh mint sprigs and luscious raspberries for an extra pop of color and flavor.

P.S. If your mugs still have some room after all is said and done, feel free to add a handful of good ole regular ice cubes for an uber chill drink.
P.P.S. You can use fresh raspberries for your ice cubes, although I found that thawed frozen raspberries tend to be juicier and make for easier ice cube creation.

Moscow Mules with Raspberry Lime Ice Cubes & Fresh Mint
Ingredients
- Raspberry Lime Zest Ice Cubes:
- 1 1/3 cups thawed, frozen raspberries; lightly mashed
- 2 teaspoons lime zest
- 1 tablespoon fresh lime juice
- Moscow Mules:
- 4 ounces chilled vodka
- 12 ounces chilled ginger beer
- 1 ounce fresh lime juice
- Regular ice cubes; for filling mugs
- Garnishes:
- Fresh raspberries
- Fresh mint sprigs
Instructions
- In a medium sized bowl, fold the lightly mashed raspberries with the lime juice and zest.
- Spoon the raspberry lime mixture into ice cube trays then freeze.
- Once frozen, fill two copper mugs with the raspberry lime ice cubes.
- Pour the vodka, ginger beer, and lime juice into the mugs.
- Fill with regular ice cubes, if needed.
- Garnish with fresh mint springs and raspberries.
