Toast is one of my favorite snacks because

  1. Carbs, and
  2. Major toppings potential!

Whether you’re going the savory route (hellooo creamy avocado + sea salt) or swaying sweet (nut butters and juicy fruit where you at?!) there’s a toast combo out there for just about everyone.

Today we’re diving into one of my favorite new combos.

It’s a little bit sweet, a little bit salty, and a lot a bit mouth-watering.

Plus healthy, of course!

I’m all about satisfying not only my taste buds, but my tummy too.

So all you have to do it smear a generous blob + glob of peanut butter onto a perfectly golden slice of toasty whole grain bread, then top her off with hot and juicy bluebs, a few dashes of cinnamon, plus a sprinkle of hemp hearts for health bonus points.

If you have melty peanut butter and blueberry juice dribbling down your chin, you’re doing it right!

P.S. I like zapping frozen blueberries until they’re steamy and juicing. Yum! If fresh blueberries are in season and available, feel free to load up your toast with a handful of those gems… no nuking required.

P.P.S. If you’re a gluten-free individual, use your fave toastable gluten-free bread of course!

P.P.P.S. Hemp hearts aren’t completely necessary, but definitely worth trying if you haven’t experienced their pleasantly grassy, nutty presence before.

Peanut Butter & Cinnamon Blueberry Toast with Hemp Hearts

Ingredients
  

  • 1 slice whole grain toast (I like Dave’s Killer Bread, use gluten-free if necessary)
  • 2 heaping tablespoons peanut butter (no added oil or sugar)
  • 1/3 cup frozen blueberries (fresh works too)
  • 4 dashes ground cinnamon
  • 1 teaspoon hemp hearts

Instructions
 

  • If using frozen blueberries, microwave in 25-second intervals until hot.
  • Spread the peanut butter evenly over the toast. 
  • Top with the blueberries, followed by the cinnamon, and hemp hearts.
