Juicy, sweet strawberries are starting to make a long-awaited appearance and I couldn’t be happier.

Well that’s actually a lie…

Throw a fluffy frolicking puppy and shirtless Trey Songz in the mix and that right there is a starter pack for surface level happiness

But for now, strawberries will have to do.

You can’t go wrong with shoving a whole pint of perfectly ripened berries straight into your face, but I wanted to include some protein and tropical coconut flavors for a darn good satisfying healthy snack!

Enter chia seed pudding.

I honestly thought I had introduced y’all to chia seed pudding already but it turns out my memory is getting a little foggy at the ripe old age of 26.

So here you go!

Mix cha cha cha chia seeds with creamy coconut milk, pure vanilla extract, real deal maple syrup and finely chopped freeze-dried strawbs (plus a pinch of salt!) then let that funky, yet delicious concoction hang out in your fridge for a few hours while you binge on Fear Pong Cut episodes and wonder if you yourself are going to turn into a chia pet.

Stir up that magical mixture then layer the pinkish pudding in two small mason jars (or whatever clean dishes/bowls/glasses you have on hand) with diced fresh strawberries and top the whole thing off with even more strawberries and maybe a little toasted coconut if you want to go all out.

Enjoy for a light breakfast, bad-a** snack, or dessert.

Just kidding, watermelon sour patch greatness is a much more suitable after-dinner treat.

P.S. I use canned lite coconut milk, but feel free to choose the full-fat stuff for an even creamier, decadent pudding. You do you.

P.P.S. Fresh strawberries tend to get a little sad and soggy if you mix them straight into the chia pudding from the get-go, that’s why I use the crushed freeze-dried variety and leave the freshies for layering.

P.P.P.S. Taste and adjust the pudding ingredients to make your taste buds sing. Want it sweeter? Add more maple syrup. Want a thinner pudding? Add an extra splash of coconut milk.

P.P.P.P.S. No there isn’t actual “coconut cream” in dis. Deal.
