Just sneaking veggies into my smoothies again!
Although there really isn’t much sneaking going on here, because you can definitely see the beautiful vibrant beet color and taste a hint of earthy beet goodness.
Before you run away in utter horror, hear me out.
We’re talking frozen juicy strawberries and extra ripe banana slices, ultra creamy coconut milk yogurt, naturally sweet oat milk, fragrant ground cinnamon, pure vanilla extract, nutty hemp hearts, a plump medjool date for even more natural sweetness + a pinch of pink sea salt to bring out all the flavors!
Not so bad, right??
And if you’re really trying to ease into this whole beet situation you could certainly start off with 1/2 cup of beets then work your way up to a full cup if you wish.
Bottoms up!
P.S. So yes I inhaled this entire recipe in one go, but I suppose it makes 2 reasonably sized servings.
P.P.S. To cook the beet, I wrapped a medium sized fella in foil and roasted it on a metal baking sheet for about an hour at 425 degrees. I then let it cool down, popped it into the fridge (still loosely wrapped in foil) overnight, and gently rubbed off the skin with my fingers before chopping it up and throwing that bad beach in the blender come morning! I believe this method allows the beet to retain more of its nutrients versus boiling, but you do what works for you!
P.P.P.S. One of my favorite smoothie + bagel spots Wild Island makes a fab strawberry coconut beet smoothie so I had to whip up own version obvi.
Strawberry Coconut Beet Smoothie
Ingredients
- 1 cup diced refrigerated cooked beets (peeled)
- 1 1/2 cups frozen strawberries
- 1 cup frozen very ripe banana slices
- 3/4 cup unsweetened unflavored coconut milk yogurt (So Delicious)
- 1/3 cup unsweetened unflavored oat milk (Silk or Oatly)
- 1 large plump medjool date, torn into 4 pieces
- 1 tablespoon hemp hearts
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 pinch pink sea salt
Instructions
- Blend until smooth. Taste and adjust ingredients to your liking.
