This right here, is an epic salad.

The kind of salad that you actually want to dig your fork right into, savor every single bite, then call it a day.

No meat required.

Or even bread to help fill you up.

Now I know bacon is usually expected when you hear the words “wedge salad.”

But nutty toasted almonds step up and provide that nice crunch and meaty flavor.

Before you start to laugh and shake your head because bacon and almonds clearly are not the same thing and no way in heck will almonds ever replace bacon…

Just give it a try.

Really.

Loads of fresh veggies are involved too.

Plus hard-boiled eggs for more protein, avocado for those healthy fats and blue cheese crumbled on top of blue cheese dressing, because you deserve a little treat (in cheese form).

And who can say no to cheese on cheese?

Not me!

In case you aren’t convinced yet, let me describe this ultimate salad situation in a little more detail.

Crisp iceberg lettuce is drizzled with balsamic vinegar and tangy blue cheese dressing, then topped with juicy tomatoes, crunchy cucumbers, green onion for a little bit of a kick, creamy avocado, perfectly cooked hard-boiled eggs, nutty toasted almonds, crumbled blue cheese and fresh ground black pepper.

Dayuuumm.

P.S. Serve with grilled wild salmon if “just salad?!” for dinner is out of the question.

P.P.S. I use Toby’s Blue Cheese Dressing. It’s delicious. But use what ever you like (preferably fresh and preservative free).

P.P.P.S This salad is technically nut super fall-ish, but it’s real tasty, so there.
