Holy MOLY.

Now this is a breakfast.

Forget smoothies, oatmeal, and all the jazz (just for a second) and get an eyeful of this crispy on the outside, tender on the inside whole grain french toast topped with juicy Bartlett pears simmered in pure maple syrup and fragrant ground cinnamon!

Whew that creamy almond butter drizzle is enough to make me cry tears of joy.

And a crunchy Double Coconut Granola topping seals the deal.

Breakfast bliss.

But wait, there isn’t any milk, eggs, or butter involved!

Miracles on 41st street right here.

Because who needs eggs when you can get a decadent custard made with magical flaxseed meal–nutritional yeast adds that nice savory “eggy” flavor.

Resourcefulness at its finest.

We all know that nutty almond butter (and peanut butter!!) are 147x better than actual dairy butter anyway… no need to go into detail there.

So.

All you have to do is mix together luscious unsweetened coconut almond milk, flaxseed meal, pure vanilla extract, ground cinnamon, nutritional yeast, plus a pinch of sea salt.

Give your rustic whole grain bread slices a quick bath in the custard mixture, then fry them up in tropical unrefined coconut oil until they reach golden brown perfection.

Oh but we’re not done yet!

While your french toast is cooking away, briefly saute juicy diced pear in more unrefined coconut oil, then throw in a couple good dashes of cinnamon and a few glugs of pure maple syrup.

Simmer away until your toast is ready for its toppings!

And let me tell you, it will be more than ready my dears.

Serve your golden bread with big spoonfuls of warm, cinnamon pears and maple syrup, then drizzle on your almond butter for even more flavor (plus healthy fats and protein)!

Finish your dish with a flourish of granola then you’re all set to dig in.

P.S. I french toastified day-old bread from Macrina Bakery. (Their Vollkorn bread is everything!) Feel free to use your favorite hearty bread… I used up about half the custard mixture with 3 slices of Vollkorn bread–the slices are on the small side. The entire custard recipe should work for about 4 slices of a standard loaf.

P.P.S. Depending on the size of your bread slices and pan, you might have to cook up your french toast in two batches. No worries!

P.P.P.S. Other product deats: I use Califia toasted coconut almond milk, which is darn near amazing on its own. For the flaxseed meal, I tend to grab Bob’s Red Mill. I get the nutritional yeast either form Trader Joe’s or the bulk section of my local heath foods store. Uhh yeah I think that’s all the important stuff! Oh and Trader Joe’s also has unrefined coconut oil for a decent price… might as well grab some Joe-Joe’s while you’re at it hehe.
