I do love me a gooood Greek salad.
Especially during the summer months when refreshing light meals are the name of the game.
Besides tanning my bod, my main goals include consuming copious amounts of juicy, sweet tomatoes and waking up less than 5 times throughout the uncomfortably sweaty Seattle summer nights.
And you know what makes a norm Greek salad super special?
Throw a couple handfuls of pita chips right in there!
Because crunchy pita “croutons” add that extra something something to fresh veggies, pleasantly salty olives, and herbs.
Yessss.
No need to bake up your own pita chips, simply buy a sack of the unflavored, lightly salted variety from your fave grocery store.
(Introduce hummus to this situation for bonus points peeps.)
Soo.
All you have to do is toss together diced refreshing English cukes, crisp red bell pepper, candy-like cherry tomatoes or precious sun golds, Kalamata olives, a sprinkle of dried oregano, fresh mint leaves, a splash of balsamic vinegar, along with a couple glugs of evoo. Season with salt and pepper then carefully fold in those pita chips!
Bammmm.
Serve with feta for those cheese lovers out there.
