This right here is a nostalgic snack.
A snack I grew up inhaling by the fistful whenever my Nana would whip up a big batch around the holidays.
She would also bring over a vast variety of festive cookies, not leaving a single soul’s sweet tooth wanting.
While cookies were usually meant for after-dinner gorging ahem savoring, scrabble could be munched on all day long without the bat of a parental eye.
The salty crunchiness of this Chex mix, aka scrabble, is really hard to beat after all.
Of course I swapped in plant-based butter, and used a vegan Worcestershire in place of the traditional Lea & Perrins sauce this time around.
Trader Joe’s didn’t appear to have garlic salt so I settled for garlic powder…
The sodium content of the other ingredients suffices, I think.
All you have to do is fold whole grain Chex, whole grain O’s cereal, salted peanuts, sesame sticks, and pretzels into your flavorful butter mixture, then bake away until fragrant and lightly golden brown.
Easy!
Be careful you don’t spoil your appetite before dinner, whoops.
P.S. You can use regular Chex and Cheerios, plus any pretzel shape you want. The whole grain option is just my preference… to help counter all that melted buttah.
P.P.S. Utilize gluten-free alternatives for some good gf munchies.
Whole Grain Vegan Chex Mix
Ingredients
- 3/4 cup vegan butter (I used Earth Balance Vegan Buttery Sticks), melted
- 6 teaspoons vegan Worcestershire sauce (I used The Wizard's)
- 1/2 teaspoon garlic powder
- 4 cups whole grain Chex cereal
- 3 cups whole grain O's cereal
- 3 cups salted peanuts
- 3 cups plain sesame sticks
- 2 cups salted pretzel sticks
Instructions
- Heat oven to 250.
- In a large bowl mix the melted butter, Worcestershire and garlic powder until thoroughly combined.
- Fold in the Chex, O's, peanuts, sesame sticks and pretzels until evenly coated in the butter mixture.
- Divide the mix among 3 rimmed large metal baking pans, spreading the mix into one layer.
- Bake for about 1 hour, stirring the mix and rotating the pans every 15 minutes. (You will need to use 2 rows of oven racks in order to fit all 3 pans.)
- When the mix is lightly golden brown and crispy, pull out of the oven and cool completely on paper towels—the paper towels will absorb some of the extra butter. Store in an airtight container.
