It’s summerrrr!!

Well almost, but you know, close enough.

And summer means berry season, which also means beyond elated me.

I could consume berries for breakfast, lunch, dinner, dessert, and second dinner (with some nut butter thrown in there of course) and be completely and utterly content with the whole situation.

Fresh berries are best shoved straight into your mouth but sometimes it’s nice to switch it up and turn a favorite summer dessert into a drinkable, refreshing smoothie.

I do love me some crisp action, enjoyed warm with a big ole scoop of vanilla bean dream butttt a chill smoothie serves as a satisfying substitute when you’re a little less excited to crank up the oven and consume a cup of sugar.

This bad boy is packed with frozen mixed berries, tender rolled oats–soaked in oat milk for double oat trouble, plus creamy salted almond butter, ground cinnamon, and pure vanilla extract.

Top your berry crisp creation off with granola and toasted pecans to seal the deal.

P.S. If you want even more oaty flavor, toast your oats in a dry skillet before soaking. Golden brown, nutty perfection.

P.P.S. If you can’t get your hands on oat milk, unsweetened unflavored almond milk will work in a pinch.

P.P.P.S. I used salted almond butter for an extract punch of flavor. If your nut butter is of the unsalted variety, simply add a pinch of sea salt… Salt Bae style but of course.

Berry Crisp Smoothie

Ingredients
  

  • 1/2 cup rolled oats
  • 1 cup unsweetened unflavored oat milk (I use Silk)
  • 2 cups mixed frozen berries (strawberries, raspberries, blackberries, blueberries)
  • 1 heaping tablespoon salted almond butter (no added oil or sugar)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pure vanilla extract
  • Granola; for topping
  • Toasted roughly chopped pecans; for topping

Instructions
 

  • Combine the oats and oat milk. Let the oats soak for at least 4 hours in the fridge. (I often soak mine overnight.)
  • Blend the oats and oat milk, berries, almond butter, cinnamon, and vanilla until well combined.
  • Top with granola and toasted pecans.
