Favorite not-quite-spring salad alert!!
I’ve been whipping up this guy on the regular because it’s a. easy b. tasty. c. healthy and d. an all around, well-rounded meal. (Redundancy much.)
Side note: I low-key hate the word “meal” but we’re going to move right along…
Seriously though, all you need is a handful of ingredients + 5 minutes then lunch is served!
Simply toss together steamed lentils (Trader Joe’s got your back here), sections of juicy orange, diced creamy cado, a handful of arugula, fresh lemon juice, and good ole S&P.
Feel free to double the recipe for a heartier dinner portion, or quadruple if you’re caring and sharing.
P.S. The ingredient amounts don’t have to be exact, just toss everything in a bowl and dig in.
P.P.S. If you’re wanting an extra hit of protein and crunch, add a handful of toasted sliced almonds.
P.P.P.S. I have a similar recipe featuring beets and spinach over here… yes lentils + oranges is where the party’s at.
P.P.P.P.S. Yep that’s right… no oil!! Or added sugar. We are winning today.
Citrusy Lentil Arugula Salad
Ingredients
- 1/2 cup cooked firm lentils (I use Trader Joe's ready to eat steamed lentils—in the refrigerated section)
- 1/2 medium-large juicy navel orange, sectioned
- 1/3 medium-large avocado; cubed
- 1 packed heaping cup arugula
- 1 teaspoon fresh lemon juice, or to taste
- Freshly cracked black pepper, to taste
- Pink sea salt, to taste
Instructions
- Gently toss the lentils, orange, and avocado together.
- Fold in the arugula.
- Season with lemon juice, pepper, and salt.
