One of the many benefits of consuming a primarily plant-based diet is the fact that I get to eat a lootttt.

And I do like to eat, so it works out rather well.

Hehe.

Don’t get me wrong, a hungry E will demolish an entire family-sized bag of chips on occasion… jalapeño potato chips holla at your girl!

But I do try to curb my hunger and fuel my bod with more satisfying snackages that deliver when it comes to lasting energy (and flavor, of course).

Enter PB&J Stuffed Dates!

Healthy fats and fiber always do the trick, and you know I can’t turn down peanut butter.

Plus, these guys come together in just minutes, so the whole “but I’m too busy to set foot in the kitchen” spiel isn’t going to work here.

All you have to do is grab yourself two jolly plump medjool dates, slice those suckers in half, then stuff them with creamy peanut butter, fruity blackberry jam, ground cinnamon, chopped dry roasted peanuts + hemp hearts if you really want to go all out.

They’re sweet, salty, creamy, crunchy, nutty, and ooey gooey.

In the best way possible of course.

P.S. Pop these dudes in the freezer for a chill out sesh if you want an uber cool treat.

P.P.S. Uhhh the ingredient amounts don’t have to be exact so stuff, slather, and sprinkle to suit your taste!

PB&J Stuffed Dates

Ingredients
  

  • 2 plump medjool dates; sliced in half lengthwise, pits removed
  • 4 teaspoons salted creamy peanut butter (no added oil or sugar)
  • 4 dashes ground cinnamon
  • 2 teaspoons blackberry jam (I like Bonne Maman blackberry preserves)
  • 2 teaspoons lightly salted dry roasted peanuts; roughly chopped
  • 1/2 teaspoon hemp hearts (optional)

Instructions
 

  • Fill each date half with 1 teaspoon peanut butter.
  • Sprinkle a dash of cinnamon onto each peanut butter stuffed date.
  • Top each date half with 1/2 teaspoon jam.
  • Sprinkle the dates with chopped peanuts and hemp hearts, if you wish.
