I got finger food for you!

Because finger food is fun and who doesn’t enjoy making messes?

I think most of us take some pleasure in making a mess… the not so fun part is actually cleaning the mess up.

But if you can eat the mess–therefore making the mess disappear–problem solved, right?

Anyway, lettuce cups are semi healthy with the potential to be very tasty.

And they’re on the lighter side, which is perfect for spring!

I’m not going to lie, I’d be perfectly fine if we bounded straight into summer but blooms and baby bunnies are kind of nice.

Although I could do without seasonal allergies.

Sniff sniff.

Now these cups can be enjoyed as an appetizer with fellow tofu and vegetable enthusiasts (or normal humans who should just be grateful that you’re feeding them… ).

You could also nosh on these guys for a light meal, shared with one.

Or shared with none if you’re like me hello hiii.

All you have to do is saute crumbled high protein tofu in a bit of tropical coconut oil then throw in diced zucchini, colorful grated carrots, frozen sweet peas, and red pepper flakes for a kick. Stir a splash of your favorite teriyaki into the mix then fill up your cups!

Top those guys off with refreshing diced English cukes, toasted sesame seeds, and a flourish of cilantro if you’re into that sort of thing.

Wash your hands (the most important step) then dig in.

(Bibs are strongly recommended for the less coordinated souls.)

P.S. This recipe is pretty easy to customize. Have some red, yellow, or orange bell peppers sitting in your fridge? Dice em up and toss them in the mix! (Just don’t use the inferior green variety… ew.) Have scallions aka green onions on your hands? Include those fellows in on the fun.

P.P.S. As always, taste and adjust the ingredient amounts to taste. Mostly the teriyaki business. I like to use just a splash but if you want a saucier tofu veggie mix, add more! Also, feel free to use your favorite bottled sauce. If you have a recipe, go for it.

P.P.P.S. My butter lettuce cups weren’t the “cuppiest” or easiest to use so I really made a bit of a mess. It still tasted good though…

P.P.P.P.S. This recipe serves one very hungry individual ahem me, two normal peeps for a light meal, or four individuals as an appetizer.
