Whoop whoop it’s happy hour!

Well maybe not technically but shouldn’t every hour be a happy hour?

I definitely think so.

Especially when refreshing daiquiris are being served up in fancy schmancy frosty glasses with juicy jumbo lime wedges.

Now I know you’re probably thinking daiquiris are sweet fruity blended drinks (and yeah those babes do exist and are all sorts of yum).

BUT

Real deal traditional daiquiris consist solely of white aka light rum, fresh squeezed lime juice, and simple syrup (sugar water).

Yep that’s it!

Shake your high-quality rum (because life is too darn short for crummy alcohol), freshly squeezed tart lime juice, and homemade simple syrup in a cocktail shaker with ice until that bad boy is chill af, then strain your liquid courage into a pretty little cocktail glass that’s been hanging out in the freezer for a bit.

Prop a fat lime wedge on the rim then sip sip sip and shake yourself up another.

Then shake your booty on the dance floor (or in your kitchen, same difference) because we all know that’s next, naturally.

P.S. To make the simple syrup, gently heat equal parts sugar and water together until the sugar dissolves. You can use granulated sugar, demerara sugar (I use this–a less refined option than granulated with a slight toffee flavor), or honey (not vegan). The honey’s flavor is definitely detectable (and tasty), but if you want a more neutral option, go with granulated. Store any leftover simple syrup in the fridge for up to two weeks.

P.P.S. My lime wedge was a little beat up but it still tasted good, I promise.

P.P.P.S. Don’t you dare use bottled lime juice. Just no. All of the ingredient flavors really shine in this bev so you must use the good stuff!

P.P.P.P.S. And don’t let your uncoordinated friend/SO/family members try a hand at shaking the drink up because it will end up spilled all over the floor. Sticky messes are the best, and wasted booze is even better, right? WRONG. (It’s always a good idea to have extra ingredients on hand, just saying.)
