I was super duper excited to come across some vegan nog made by my fave dairy-free beverage peeps over at Califia Farms.
So I picked up a semi-pricey bottle of the stuff and ran over to my friends’ place for a night of holiday treats paired with festive episodes of The Great British Bake Off… which somehow I had yet to watch.
Alas, my vegan nog–although decent–wasn’t nearly as delightful as the thick, creamy nutmeg spiked delight of real eggnog.
According to my friend, the aftertaste is a bit reminiscent of pink bumble gum.
(She wasn’t wrong.)
Soooo what to do with my poor reject bottle of holiday joy gone wrong?
Well first I whipped up a batch of vegan eggnog french toast topped with toasted pecans and a light drizzle of pure maple syrup.
Then I promptly took it upon myself to create a tasty as can be eggnog shake!
For breakfast, of course.
It’s a banana eggnog shake, but before you get all weirded out over banana bubblegum breakfast fun, let me just tell you that it works.
And the final product doesn’t taste like gum, don’t you worry.
All you have to too is blend frozen banana slices with your vegan eggnog, a couple hefty dashes of pumpkin pie spice (or just nutmeg, if you’re wanting to grasp at the last fragments of traditional holiday cheer), plus a good splash of pure vanilla extract.
Blend blend blend until you get a luxurious, frosty yet creamy shake, then top with nutty toasted pecans for a bit of crunch and more festive flavor.
P.S. I haven’t used other brands of dairy-free nog for this recipe, but you could certainly try.
P.P.S. You know… if you wanted to make this a spiked drank, a splash of dark rum could certainly do little harm. Naughty list status right there ha.
P.P.P.S I should have popped those darn bubbles in my shake (see photo) but I was too excited to get the photo shoot done and chug the thing.
