Oh how I love french toast.

Tender and subtly eggy, plus the perfect vehicle for toppings on toppings.

For me that usually includes fruit and peanut butter galore, so here we are!

Since Just Egg is kind of amazing, I figured I’d whip up a new french toast recipe utilizing the stuff.

If you can’t get your hands on the vegan liquid egg (made from mung beans of all things) then head on over here to try this delectable french toast recipe with flax “eggs.”

So many faux eggs these days, I know!

This particular batter?? includes miraculous Just Egg, unsweetened unflavored oat milk, nutritional yeast (to amp up the savory “egg” factor), pure maple syrup, real deal vanilla extract, fragrant ground cinnamon, and a pinch of salt.

Dip your whole grain bread right on in there then fry it up in a healthy dose of unrefined coconut oil until golden brown.

Mmmm.

But wait, it gets better!

Before you dig in, top your mouthwatering french toast off with cinnamon maple apples—cooked down until soft and enhanced with a splash of vanilla + a pinch of pink sea salt.

Creamy peanut butter and nutritious hemp hearts elevate this already delicious breakfast even more.

Are you drooling yet?

Because I am…

P.S. Use a nonstick pan and a sufficient amount of oil so your eggy bread don’t stick. I mean it ha.

P.P.S. You may have some batter left over depending on your bread slice size and how much you decide to cook up. Feel free to refrigerate the egg mixture up to one week. French toast multiple times a week is a treat you deserve after all.

Ingredients

Apples

  • 1 1/2 cups small dice apple (I used 1 medium Honeycrisp)
  • 1/2 cup water, plus more if necessary
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon pure vanilla extract
  • Pink sea salt, to taste

French Toast

  • 2 slices whole grain bread (I used dry sandwich bread)
  • 1/2 cup Just Egg
  • 2 tablespoons unsweetened unflavored oat milk
  • 2 teaspoons pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon nutritional yeast
  • Pink sea salt, to taste
  • 1 1/2 teaspoon unrefined coconut oil

Toppings

  • Creamy peanut butter (no added oil or sugar)
  • Hemp hearts
  • Pure maple syrup, warmed if desired
  • Ground cinnamon

Instructions

  • For the apples, add the apples, water and cinnamon to a medium nonstick pan. Simmer for 10 to 15 minutes, or until the water has evaporated and the apples are soft, stirring occasionally. If the water evaporates before the apples have softened, add more water. Stir in the maple syrup, vanilla, and salt, then heat over low for one minute. Remove from heat.
  • For the french toast, in a shallow bowl (large enough to fit a slice of bread) whisk the Just Egg, milk, syrup, cinnamon, vanilla, nutritional yeast, and salt until well combined. Heat a large nonstick pan over medium-low heat. Add the coconut oil and swirl to coat the pan. Dip the bread in your egg mixture, coating both sides, then carefully transfer to the hot pan. Cook for 5 minutes on each side or until golden brown.
  • Arrange your cooked french toast on a plate, then top with peanut butter, the cooked apples, hemp hearts, plus more syrup and cinnamon, if you wish.
