Because my pb addiction is unwavering and I’m all about those sweet breakfasts.

This is really quite simple, thanks to luxurious coconut milk yogurt.

I get the unsweetened, unflavored variety for some blank canvas action.

The possibilities are nearly endless…

Today we’re stirring together our coconut milk yogurt (yes it’s dairy-free and vegan) with creamy peanut butter (the natural kind because I’m a natural girl), pure maple syrup for a touch of sweetness, real deal vanilla extract and fragrant ground cinnamon.

Layer your mouth-watering yogurt with juicy thawed frozen berries (we’re talking blueberries, blackberries, and strawberries) and perfectly ripened banana slices then top her off with a drizzle (ahem blob) of peanut butter + nutty hemp hearts, for some extra health.

Breakfast, snack or dessert, covered!

Now sink your spoon into that.

P.S. Taste and adjust the ingredient amounts to make your taste buds and tummy as happy as can be. Sometimes I go light on the cinnamon and add a little extra pb. This bad boy is richh so keep that in mind. Sharing and having leftovers are always an option… or not.

P.P.S. I like using thawed frozen berries because they’re extra juicy. That sweet, colorful juice flows into the yogurt for a real PB&J-esque experience. You can certainly use fresh berries if they’re in season of course!

Vegan PB&J Yogurt Parfait

Ingredients
  

  • 1 cup unsweetened unflavored coconut milk yogurt (I use So Delicious)
  • 2 tablespoons natural peanut butter (no added oil or sugar)
  • 1 tablespoon pure maple syrup, or to taste
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon ground cinnamon

For Layering:

  • Thawed frozen mixed berries (I used blueberries, strawberries, and blackberries)
  • Banana slices
  • Peanut butter
  • Hemp hearts (optional)

Instructions
 

  • Mix the yogurt, peanut butter, maple syrup, vanilla, and cinnamon until combined. Taste, and adjust the ingredient amounts to your liking.
  • In a glass, layer 1/3 of the yogurt followed by berries and banana slices.
  • Repeat twice more, then top off your parfait with a drizzle of peanut butter and a sprinkle of hemp hearts, if you wish.
