Hello I’m an extra busy body these days–though not too busy to occasionally throw down in the kitchen… yet–so let’s get right to it!
A few of my very fave salad toppers include creamy avocado + juicy fresh fruit + crunchy toasted nuts.
The flavor and textural combo never disappoints.
Talk about reliability.
So I figured, why not top toast with this winning threesome?
This time around I went with lightly mashed avocado, sweet sliced strawberries, and nutty almonds.
Let’s not forget the golden brown whole grain toast and sea salt!
So simple, yet soo tasty, and sooo satisfying.
(Honestly I wanted to whip up another right after inhaling the first, although sadly I used up the last of my precious avocados. Tear.)
P.S. The ingredient amounts don’t have to be exact here, so do what looks the most drool-worthy to you!
P.P.S. Pleaseee add salt to help bring the lovely flavors out of their shells. It’s really quite magical.
P.P.P.S. Pistachios would be a nice sub for our almond friends. Yum.
Avocado & Strawberry Toast with Almonds
Ingredients
- 1 slice whole grain toast (gluten-free if necessary)
- 1/2 medium avocado; lightly mashed
- Sea salt, to taste
- 2 to 3 strawberries; sliced
- 1 heaping tablespoon roughly chopped toasted almonds
Instructions
- Spread the avocado evenly over the toast, then season with salt.
- Top with strawberry slices and almonds.
