This loaded salad with creamy avocado dressing came to life in my kitchen.

Yes I know it’s spring (hooray!) and sweet potatoes are fall fare, but I personally enjoy consuming those guys all the time.
They’re flavorful, versatile, affordable, and healthy… so what’s not to like?
