Yes I know it’s spring (hooray!) and sweet potatoes are fall fare, but I personally enjoy consuming those guys all the time.
They’re flavorful, versatile, affordable, and healthy… so what’s not to like?
So yeah, PB&J’s are hard to beat.

Spinach artichoke dip is hands down my very favorite dip.
Well homemade spicy guac is definitely up there too but rich and creamy spinach artichoke dip seems much more like a treat to me.
No no, sadly there isn’t any peanut butter involved today, but there are lightly salted roasted peanuts!
Which are almost as good, but not quite (let’s be real).
We still have a whole month of winter left here in Seattle and I’m already pining for carefree summertime.
Long warm days spent lounging by the pool with refreshing drippy watermelon slices and icy cocktails are hard to beat, you know.
